Fajita Pasta Bake





This dish is so easy and so delicious. It's packed with flavor and tastes even better the next day with some sour cream on the side. 



You will need:

•1 onion

•bell peppers & jalapenos

•cherry tomatoes

•taco seasonings

•penne pasta

•1/2 cup of cream cheese

•shredded cheese blend


Preheat oven to 400° degrees. Boil salted water to prepare for pasta. Chop up fresh vegetables and place in baking dish. Coat veggies with olive oil, salt and pepper.



Bake for 15-20 minutes or until edges get charred.





Next, drain pasta and toss into baking dish with vegetables. Add in cream cheese and taco seasoning and thoroughly incorporate all ingredients.








Add in a tablespoon of butter or oil if mixture is too dry. Sprinkle with cheese, and pop it back into the oven for 15 minutes or until cheese is crisp and bubbly.





Serve and enjoy! As I mentioned this is great the next day with some sour cream and dried chives. I pair this with my summer salad as a to go lunch the next day!
