Low Carb Cheesy Cauliflower Rice




I'm always trying to find different ways to make cauliflower and broccoli. Especially trying to come up with different ways to get the kids to eat up some veggies. This one is healthy and delicious! I'll even share a bonus recipe for the leftovers!


You will need:


• 1Head of cauliflower


• 1/4 cup shredded cheese

Splash of cream

•Chives

•2 Tbs of butter



Bring a large pot of salted water to a boil. Wash and chop cauliflower. Add into boiling water and cook for 8 minutes or until tender. 

Drain cauliflower and transfer back to pot. Melt in butter, cheese, and cream. Season generously with salt and pepper. Garnish with chives.





This does make quite a bit so we did have some leftovers! I also had some leftover Banza pasta in the fridge that I needed to use up as well. If you haven't heard of Banza pasta, it's pasta made entirely out of chickpeas! It's  packed with protein and fiber, so if your avoiding pasta, this is a great option. 



 You will need:


• Cauliflower Rice

• Banza pasta

• Butter

• Breadcrumbs

• Shredded cheese

• Seasonings


Preheat oven to 350°. Grease a baking dish appropriate for your leftovers. Combine cauliflower rice, pasta, and cheese together. Sprinkle top with breadcrumbs and seasonings of choice. Slice thin pats of butter over top. Bake for 25 minutes or until bubbly. Broil on high last five minutes for a crispy top.
