Homemade Potato Wedges








I normally keep a big bag of brown potatoes in the fridge to have on hand for some starchy meals. This week I found a bag of organic Yukon gold potatoes. These are probably my favorite kind of potato. They seem to have such a buttery taste to them.

The kids love fries so I try to make a "healthy" version of it. Sometimes they eat it sometimes they don't 😂. It all depends on the day. If there's any leftovers the next day I will melt some cheddar cheese on top, add a dollop of sour cream, and garnish with some chives.


You will need:

• 4 potatoes of your choice

• Olive oil

• Salt & pepper

• Garlic powder

• 1 Small Onion

• Fresh or dried parsley




Preheat oven to 400°. Wash and dry potatoes. Cut into skinny fry shapes for a crisper, crunchy taste, or wedge shapes for a smoother texture. Slice up onion.

Place all potatoes and onions on baking sheet. Drizzle on olive oil to coat. Generously season, and toss everything together with clean hands. 

Bake for one hour or until tender. Flip and toss every 15 minutes to ensure even cooking.
