Low Carb Cauliflower Mac & Cheese

Today is Thursday, and it's pretty much my last day to cook up my fresh veggies because I willwork all weekend, and usually won't get too intricate with my meals. So I wanted to try to make cauliflower Mac and cheese, and let me tell u it came out so good! I will sugget using two heads of cauliflower if you have a big family. I used one whole cauliflower and it was gone in no time!

                    Ingredients :

• fresh cauliflower

•olive oil & butter

•fresh chopped garlic

•parmasean and cheddar cheese

•breadcrumbs (optional)

•salt & pepper to taste

First, I'll use my instant pot and I will set it to saute on low. Wash and chop cauliflower. Add olive oil to heated pot. After oil heats up, start adding in chunks of cauliflower. Add salt and pepper. Next, add in fresh chopped garlic. After cauliflower looks tender and garlic is fragrant, turn off pot and transfer mixture to your baking dish. Coat with parmesan cheese, cheddar cheese, and bread crumbs. Bake at °350 degrees for 30 minutes or until cheese is bubbly and crisp on top. Add more salt and pepper if you like. Serve up and enjoy!
