Instant Pot Low Carb Zucchini Noodles

If you read last week's grocery list, you might remember I was on a mission to try some vegetarian low carb meals. I stocked my fridge with loads of veggies including zucchini and cauliflower. After researching some recipes I opted to try the zucchini first. 
Back in the day I had bought the veggetti vegetable spiraler. After only using it a handful of times, while I was on one of my declutter kicks, I tossed it. Today that spiraler would have come in handy, but we all know what happens when we throw that one thing away that we might need one day. Apparently, this can be done by hand with just a vegetable peeler, but this was just too time consuming. I would end  up cutting very thin slices lengthwise. I've also mentioned before how much I love my instant pot💕. I will cook this whole meal with the instant pot on the saute setting. 


 • 3 Medium Zucchinis

• 2 Vine Tomatoes

• 3 Cloves of Minced Garlic

• 2 TBS of Flour 

•Parmasean Cheese

• Italian Seasonings

• Olive Oil

I am not a baker. I do not measure things accordingly. Please forgive me in advance as I mostly eyeball my measurements.
Now that that's out of the way, I will turn my instant pot on  and set it to saute. I'm going to keep the saute on low. I don't want to overcook the veggies, I still want them to have a bite to it.

Add in some olive oil. Once it's warm toss in your minced garlic. Dice or cube the tomatoes, then add those in the pot when the garlic is fragrant. Start adding your seasonings of choice. I do salt, pepper, garlic powder, basil, oregano, and parsely.

Add in the legthwise thin zucchini strips, or whichever way you chose to cut them!

I've read not to salt the zucchini once it's in the pot because this will draw out more water from them and make it soggy. Salt them after it's cooked if you need to add more. This made a huge difference this time around for me. 

I cook it for about 5-7 minutes more or until the zucchini is tender. After that turn off the pot and add in the flour and cheese to create a bit of a "sauce" from the liquid. 

Serve it up in bowls and top with more shredded cheese if you like! I added in my own helping of shredded Gouda on top and it was great! No pasta carbs, and I was full for the night!
