Easy low carb and vegetarian dinner

Cheesy cauliflower and roasted carrots

Eating low carb when your a vegetarian can be challenging. For me, my go to is always bread and pasta. I'm just going to blame this on being Italian 😉. Unfortunately after hitting my thirties and having three kids I think it's safe to assume these carbs have caught up to me, and my thighs. Although this dish isn't packed with protein, after two servings I am stuffed. 


I use organic baby carrots, and regular cauliflower. It's rare to find organic cauliflower near me but obviously this is personal preference.

I simply wash and chop everything. I try to cut carrots small because they take longer to cook. I prefer softer carrots but I also don't like to overcook and lose nutrients.


I brush my baking dish with olive oil
 
then toss all the veggies in. I use about 4-5 pats of butter. I am not one to precisely measure. Generously coat with salt and pepper.
Bake at 350° for about 40 minutes or until tender. Mix in shredded cheddar cheese and broil for until golden brown.
