Crispy Kale Chips Recipe


If you have picky toddlers you know how frustrating it can be to get them to eat their veggies. Fortunately, these are a big hit at our house and my kids have no problem devouring them. With loads of vitamin A and K this is a great super food for growing kids. 


I usually buy my kale at Aldi's. It's affordable and it's organic. 

It says it's thoroughly washed but I still like to rinse it just in case. Next I'll prepare my baking sheet and spread the kale evenly. I normally use two baking sheets for one bag of kale. I remove the thick stalks as these are very bitter, but personal preference is up to you.

I generously coat with olive oil, salt, and pepper. Be cautious with the salt as these shrink up quite a bit and can get too salty too quick. I usually do a pinch before baking and some after if I still need it. Bake at 350 for 20-25 minutes depending on how crunchy you like it.  For variations of flavor add fresh lemon juice, garlic, or grated parmesan.
